Opening a bar in Berlin: what it costs and what I would do differently the second time.

Opening a bar in Berlin costs time, money and a concept that carries more than a beautiful room. I did it with Honey Lou: empty shell, fit-out, permits, brand, team, opening, and since then three years of operation with over 200 events a year. Here is what it cost, which mistakes you can skip and how I accompany founders to the opening.

The cost blocks.

Fit-out and technology are the biggest block: ventilation, plumbing, electrics, bar, cooling, sound. Then permits and reports, deposit and rent before opening, initial equipment from glasses to till, brand and website, and three months of running costs before the place carries itself. Whoever starts without equity needs a cost plan that a bank or a partner reads. I write it with you, with real Berlin numbers from my own business.

What is different in Berlin in 2026.

The Senate plans a new restaurant act with digital permits within four weeks and longer outdoor hours. VAT on food has been back at 7 percent since January. The minimum wage rises to 14.60 euros in 2027. And guests increasingly find bars through AI answers instead of portals. A new bar therefore needs, from day one, a website that Google and ChatGPT read, and a reservation system without commission.

What I would do differently the second time.

Automate the numbers from day one instead of sorting receipts every night in the first year. Build the community before the opening, not after. Plan events as a fixed revenue block, not as an extra. And fix the brand before the fit-out, because it decides what gets built.

Questions

How much does it cost to open a bar in Berlin?
That depends on the state of the space. A shell costs a multiple of a taken-over restaurant. We write the cost plan with your numbers in the first step, so you have a figure that holds.
Can I open without equity?
With partners, brewery contracts or loans, yes, but each of them has a price. The cost plan shows which path fits your concept.
Which permits do I need?
